Directions
Roast Chicken
Preheat oven to 400ºF.
Place the marinated chicken on a lined pan and roast for 25 minutes or until internal temperature reaches 165ºF.
Make a cut at the end of the tip of the breast towards the thigh and separate.
Plating – Rice & Chicken
Place rice in the center of the plate. Stack chicken pieces on top, using the thigh bone to create height as shown in the reference image.
Finish & Garnish
Drizzle reserved Peri Peri marinade around the plate. Garnish with bias-sliced scallions.
