Ingredients
For the Skewers

1 lb beef of choice (lean cut recommended)

2 tbsp olive oil

4 tbsp lemon juice

4 garlic cloves, minced

2 tsp dried oregano (or fresh)

1 tsp smoked paprika

1 tsp ground cumin
-
1 tsp salt
-
1 tsp black pepper
-
1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

1 zucchini, sliced into rounds
For the Light Yogurt Sauce

½ cup nonfat Greek yogurt
-
1 tbsp lemon juice
-
1 garlic clove, minced
-
1 tbsp dill or parsley, chopped

Salt & pepper, to taste
Instructions

Cut the beef into 1-inch pieces. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.

Add beef cubes to the marinade, toss to coat, and cover. Refrigerate for at least 30 minutes (up to 12 hours).

If using wooden skewers, soak in water for at least 30 minutes to prevent burning.

Thread the marinated beef onto skewers, alternating with bell peppers, onions, and zucchini.

Preheat grill to medium-high heat and lightly grease grates with cooking spray.

Grill skewers for 4–5 minutes per side, turning once, until beef reaches at least 125°F (medium-rare) or desired doneness.

In a small bowl, mix Greek yogurt, lemon juice, garlic, and dill or parsley. Season with salt and pepper to taste.

Serve skewers with yogurt sauce for dipping.
