Chicken Tinga Lettuce Wraps

Ingredients

  • 1 lb boneless, skinless chicken breast

  • 1 white onion, sliced

  • 2 garlic cloves, minced

  • 1 chipotle pepper in adobo

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ cup tomato sauce

  • ½ cup chicken broth

  • 8 lettuce leaves (for wraps)


Instructions

  1. In a skillet, sauté the onion and garlic until softened.

  2. Stir in the chipotle pepper, paprika, cumin, tomato sauce, and chicken broth. Bring to a simmer.

  3. Add the chicken breasts and cook for about 15 minutes, or until fully cooked.

  4. Remove chicken, shred with forks, and return to the sauce. Simmer briefly to absorb flavors.

  5. Spoon the chicken mixture into lettuce leaves.

  6. Serve warm.
