Healthy Weight Loss Dinner Recipe: Balsamic Glazed Chicken

Boneless, Skinless Chicken Breast 2 ea
Olive Oil 1 tsp
Salt 1/2 tsp
Black Pepper 1/4 tsp
Garlic Powder 1/2 tsp
Dried Oregano, or Fresh 1/2 tsp
For the Balsamic Glaze
Balsamic Vinegar 1/4 cup
Local Honey 1 Tbsp
Dijon Mustard 1 tsp
Garlic Clove, Minced 1 ea
Cornstarch 1/2tsp
Water 1 tsp

Cooking instructions: 1. Prepare the chicken, pat breasts dry with paper towels and season both sides with salt pepper, garlic powder and oregano. 2. Sear the chicken, heat olive oil in a nonstick or cast-iron skillet over medium-high heat. 3. Sear the chicken for about 3-4 minutes per side until golden brown. Reduce heat to medium-low heat and cover for 6-8 minutes 4. Flip once, and continue to cool until the internal temperature reaches 165°F (75°C). 5.  While the chicken cooks, whisk together balsamic vinegar, honey, dijon mustard, and minced garlic in a small saucepan over medium heat 6.  Bring to a simmer and stir in the cornstartch slurry to thicken the sauce about 2 minutes. 7. Once the chicken is fully cooked, pour the balsamic glaze over it in the skillet, allow it to coat the chicken 1-2 minutes. 8. Remove from heat and let it rest for 3 minutes before slicing. Serve with Steamed Veggies or a light salad.
